CHIPOTLE MEATLOAF

Ingredients:
1.5 pounds ground chuck
.5 pounds Chihuahuan Chorizo
1 cup diced red bell pepper
1 finely chopped onion
2 scallions thinly sliced
5 cloves of minced garlic
1 chipotle pepper
1 tablespoon adobo sauce reserved from the chipotle can
1 tablespoon Worcestershire sauce
3 eggs
.5 cups of bread crumbs
1 teaspoon of your favorite steak seasoning
Kosher salt to taste
Freshly ground pepper to taste.

Serves 8

Pre-heat oven to 350
Thoroughly mix all the ingredients in a bowl.
Shape the mixture and put in a loaf pan.
Cover with foil and bake for about an hour. Then remove foil and let the top brown.
Remove from oven and let it stand for 15 minutes.
Remove from pan and serve warm.
